At chapter 4 of the 'Kitchen' Session in @veganset At chapter 4 of the 'Kitchen' Session in @veganset 's handbook there is a very important topic that it's fundamental for each Hospitality sector employee to know: The Meat substitutes.

It's a topic with a lot of misinformation around. What is important for a Chef or for a F&B manager to understand is what are the different categories and which one could be the best for every outlet at the Hotel.

The meat substitutes can be divided mainly in four categories.

👉🏻 TRADITIONAL SUBSTITUTES
They are meat substitutes made from soy or other legumes and have been existing for hundreds of years such as tofu and tempeh or made from wheat gluten as in the case of seitan.

👉🏻 MODERN SUBSTITUTES
They are modern substitutes produced from plants and legumes. Peas and/or bean proteins, beets, soy derivatives, potato starch, coconut oil are usually used. The amount of protein contained in these foods is similar to that present in meat and the flavor and texture also reflect its characteristics. 

👉🏻 3D PRINTED MEAT
The plant-based "steak" is formed, like animal meat, from 60-70% of water and 20% of proteins, coming from yellow peas, plus vegetable oils, natural flavorings and dyes and algae extracts useful for the fibers . This is a very recent technology.

👉🏻 CULTURED MEAT
In addition to vegetable substitutes there is another market, the one of cultured meat: in fact, there are molecular engineering techniques capable of creating real edible pieces of meat starting from animal cells. This is clean meat, meat that does not require either the breeding or slaughter of animals. Cultured meat (or even synthetic, artificial or in vitro meat) is an animal meat product originating from stem cells.

Beyond the above main categories there is surely the Chef's innovation and creativity as shown in the picture with a oyster mushroom cooked with the pan-pressing technique by Chef @dereksarno .

What an amazing dining experience I had at Gramen the gourmet Restaurant at Lefay Resort & SPA Lago di Garda.

The menu was spectacular with all tastes and consistencies perfectly on point.
