Dreaming of the perfect pairing
March is the month of Spring. It’s a month of rebirth, but temperatures might still be chilly in Europe. That’s why I have chosen for this month’s pairing the beautiful ‘Tatin of baby onions with maple syrup and fir cream” realized by Chef Claire Vautrin for the Restaurant Breathe in Paris. Tasty, fragrant and elegant. The perfect way to elevate local ingredients to true authenticity.
I have paired it with a rare and unique Italian label. The ‘E 2007 – Giorgio Mercandelli’. On the nose there is toasted walnut, curry, citrus peel in infusion and wild herbs. The sip is very full and the it has an endless persistence.
