I picked Metamorfosi after reading the tremendous comments on TripAdvisor but, I must confess, I would have never thought at something like this. They are amazing.
The setting is minimal; but what have been deducted in terms of decoration has been extensively compensated in Service and Food.
Paolo knows how to welcome you and make you feel special. And he does it without the snobbish attitude you can sometimes find in Michelin starred Restaurant. He is a genuine and expert host. And the Team is very well educated in remembering the complex preparations of all courses and in providing you with Water and Wine in a perfect timing.
The Food is something beyond words. The Chef Roy Caceres, Colombian from Bogotà but naturalized Italian, is a prodigy. He is an aromatic herbs virtuoso and, despite the amount of ingredients he uses, his creations are perfectly balanced and yet gently flavorful. It took 6 months to him to sharpen one of the dish I tried. They recommend to specify you are Vegan when you reserve in order to arrange something special for you.
You eat slowly at Metamorfosi … because you don’t want the experience to finish.
